Ferments FAQ's

All about our fermented foods and order process.

How do I add sauerkraut to my diet?

This is one of our favorite questions! There are many ways to enjoy this powerful superfood. Probiotics are good for our gut. So, we recommend eating a little on purpose every day. Grab a fork and eat it out of the jar or add it to your favorite dishes.

Our recommendation is to eat a little bit on purpose every day. It is helpful for us to get a daily dose of probiotics for the good of our gut. Personally, we eat a little bit right out of the jar with a fork with or without other food, a couple times per day. That said, we love to add sauerkraut as a side to other dishes.

Here are a few ways you can liven up your foods:

• Breakfast: Mix into scrambled eggs, build into a breakfast burrito or sandwich, or blended in your favorite green smoothie.

• Lunch: Top a salad (egg, potato, or fresh veggies – it makes an excellent dressing), fold into a wrap, snazz-up a stir-fry.

• Dinner: Pile it on your protein of choice or dress-up a side dish.

How much sauerkraut should I eat?

If you're beginning your gut-health journey, go slowly. Start with 1-2 teaspoons a couple of times a day and work your way up to ¼ cup. Depending on your gut's condition, you may experience a little gas or bloating as your digestive environment becomes more balanced. Adjust portions as needed for comfort.

How do I store my kraut, kraut juice, or kvass?

It’s best to keep your kraut and kraut juice in the fridge. Otherwise, they’ll continue to ferment. While this isn’t necessarily a bad thing, at some point, the flavor and crunchiness will be affected. Kvass should always be refrigerated.

How long will my product last in the refrigerator?

Keep our sauerkraut in the fridge for 6-9 months and our kvass for 6-8 weeks. Be sure to check the expiration date stamped on your product.

Can I heat my sauerkraut or cook with it?

You can, but we don’t recommend it. Our kraut is fermented raw - not pasteurized – and considered a “live” food with healthy enzymes and bacteria that benefit your gut. Heating your kraut will compromise these live elements. But don’t hesitate to add it to warm foods. Just be sure to add it at the end of the cooking process.

Why should I eat fermented foods?

Fermented foods have an abundance of probiotics (good bacteria), which feed the naturally existing friendly probiotics in our digestive tracts and keep them multiplying. They’re rich in fiber, vitamins, and essential trace minerals. Probiotics assist our body with digestion and the absorption and availability of their nutrients. Certain strains of bacteria only come from fermented foods.

Stress, pollution, and diets high in sugar and processed foods wreak havoc on our bodies. And there are certain medications (antibiotics and even birth control pills) that disrupt the balance of good bacteria in our gut. Fermented foods restore law and order to our microbiome and help us live happier, healthier lives.

How many live good bacteria (probiotics) are in a serving of sauerkraut?

While it’s impossible to know the exact amount per serving, rest assured it’s in the billions. Research shows that 16 ounces of raw, fermented sauerkraut has the approximate equivalent of 8 (100-count) bottles of probiotics.

What are probiotics?

Probiotics are the good live bacteria naturally found in our bodies. We also have bad bacteria. When there are too many harmful bacteria, our system gets out of balance. And we become susceptible to infections and disease. Probiotics feed our good bacteria and crowd out the harmful bacteria. We need probiotics to get us back in balance.

Can probiotics survive and go through the stomach?

The simple answer is yes. They are tough little buggers. However, it’s a bit more complicated than that. Bacteria are like little armies who have the ability to storm through the acid ph of the stomach. Like other armies in battle, not all of them will make it. However, the good news is once they've made their way through, they are well equipped to reproduce and repopulate quickly in their next local, where they will continue to create a safer and healthier environment. There are plenty of studies out there to back this claim. You can find reliable ones on study sites like Pub Med.
